There is nothing I like better than a dinner I can make in one dish. It makes cooking and cleaning so much easier. For this recipe, I was inspired by some great chicken sausages I bought at Whole Foods on Monday after work. It is so simple and literally took about 15 minutes of prep and 30 minutes of cooking. Simple. Tasty. Healthy.
Sausage, Bean & Kale Casserole
Ingredients:
3-4 Italian Sausages (Use Chicken to reduce fat)
1, 15 ounce can of white kidney beans.
1.5 cups of kale
1-2 cups chopped carrots (I used orange and yellow)
1/2 cup pearl onions
2 cloves of garlic, chopped
1 cup of chicken broth
3 pinches of bread crumbs
Olive Oil
Salt & Pepper to taste

Directions
1. Preheat oven to 350. Grab your cast iron skillet and pour 1-2 tablespoons of oil in it. Heat, add your sausages and cook them through. Once cooked, set aside.
2. Drain some off some (not all!) of the fat and add in your onions. Cook until they are slightly see through. Add your carrots and cook until tender. Lastly, add your garlic.
3. Pour in your chicken stock and then add your kale. Cook your kale until it wilts.
4. Drain your beans and add them. Add in cooked sausage, stir.
5. Sprinkle your bread crumbs on top, add salt & pepper, and transfer the whole skillet to the oven. Cook for 25-30 minutes.
6. Serve with some nice crusty bread! Yum!
